Where beautiful women instinctively flock like the salmon of Capistrano

That Dumb and Dumber quote barely relates to this post, but I’ve always enjoyed how the word Capistrano rolls off the tongue—and I’m making salmon for dinner tonight. Et voilà!

Jenna and Erica are coming over, and I have promised them salmon, green beans and sweet potato fries. I am using the following recipe for the marinade/glaze, omitting the sugar part (hope that works out ok) and seriously cutting down on the oil. Also, FYI, these proportions are for two 2 1/2- to 3-pound whole salmon fillets.

  • 2/3 cup white-wine vinegar
  • 1 cup Dijon mustard
  • 1/2 cup firmly packed light brown sugar
  • 2 cups vegetable oil
  • freshly ground black pepper to taste
  • 3 tablespoons soy sauce
  • 1/4 cup chopped fresh dill sprigs
